GGÇÖday Kenny!Been such a bugger of a day here (Sydney). Got to 39 degrees centigrade this arvo.Decided that weGÇÖd have a spread for dinner GÇÿround the pool at dusk (some two hours off, it's 18:45 AEST). IGÇÖve called it the GÇ£Alexander SpreadGÇ¥, the idea being that thereGÇÖs a bit from most (canGÇÖt eat everything mate!) areas of the empire:1 - AlexGÇÖs Occy GÇô
Marinated octopus/lemon juice/salt/olive oil/chilli and good Syrah (that marvellous Persian grape which became Shiraz. Quick seared on the hotplate.2 GÇô Seasoned sausage GÇô Lebanese Kafta mince (lamb/mint/parsley/shallots and garlic)3 GÇô Tabouli GÇô (no explanation necessary), Lydian flat breads and Babaganouche (ground roasted eggplant dip from the Lebanon).4 GÇô Cilician dolmadesObviously the octopus is Greek. The chilli and lemon juice added so as to have it assault the ranks of taste buds (and the rest of the spread)like the Companion Cavalry.A bottle of good Shiraz GÇô as Alexander would never have such a feast minus a decent red for his GÇ£cupsGÇ¥.Today is defintely not the day to sample a Porus pot roast - he may keep his indian spices for winter!

My mouth waters at the thought! I will probably be having Kenny's Alexander Salad this weekend - it's become quite a favourite, and since Christmas almost the entire family has been introduced to it.Enjoy the spread! Here in South London I feel I could probably do with the Porus Pot Roast ...ATBMarcus

G'day Keny.Even worse mate GÇô went to Manly today on the ferry. This takes some forty minutes and crosses the open Harbour between the heads. ItGÇÖs a big boat ride!Mate, everything went down well. I know you didn't need the description of the grog. You're a stronger man than I'll ever be mate. I'll tell you one thing though, I came back into Port Jackson (Sydney Harbour) today with some Americans at my side GÇô from Manly GÇô and they were aghast, as was I.You ever come to these shores mate - look me up. Michael HailI love the Ausies. But cant stop thinking we sent the convicts and you got your revenge by sending Neighbours and Home and Away. Thanks for the invite but as with America your country is too huge to get my head around too much to see. Oh and those funnel web spiders I dont think id get any sleep worrying about those and those poisonous snakes. Your right we are cold and wet but the only poisonous things we got are mushrooms.The next time you post please lie and say the temperatures sub zero and Pissing it down. Companions,I feel that the following aubergine (egg plant) salad truly encompasses the old world:INGREDIENTS
aubergine, three-medium sized, i.e. 1 - 1.5kg
pomegranate seeds, four to six tablespoons
garlic, two to three colves
coriander leaves, handful
olive oil, 10-12 tablespoons
seasoningPREPARATION TIME
30-45 minutesFirstly, pierce the aubergine several times with a fork and place, preferably, over a natural, wooden or charcoal flame. Alternatively, place them on a grill stand over a gas flame. Either way will create a delicate, smokey flavour. Heat to a pulp (soft flesh, complemented with white-cindered outer). Turn over and repeat.Once this process is complete, allow aubergine to cool before peeling (from base upwards). Squeeze pulp in a muslin cloth to remove excess juice. This is quite bitter and needs to be removed. Of interest, aubergine juice is allegedly used amongst Indian [men] for member enlargement and stimulation...Chop garlic cloves and coriander leaves and add to aubergine, along with all other ingredients. Mix thoroughly. Allow one to two hours ot marinade. Pomegranate were hang over door frames in ancient Greece. It was seen as the fruit of fertility.COMMENTS
For those with a less sophisticated taste, the olive oil can be substituted for mayonnaise, but this drowns rather than enhances the flavour.
